Using CO2 in its liquid or dry ice form within the Cryogenic Freezing (CF) process reduces large crystal count within products – normally formed during mechanical cooling – by freezing quickly and efficiently.

The result is that the product tastes better and retains a better texture due to better-preserving cell walls within the products. Using CO2 within this process can save space, quality and bio-count within fish and seafood within your business and ensure that the products do not develop odours.
